If you don't want to copy certain sections of the note when copying the note, you can hide specific section by hovering on the section title and clicking on the eye icon.
If you want to do so for every notes, you can go to the Note tab of the Settings and enable the "Remember hidden sections" toggle for each section you want to hide.
